A Portuguese bakery network with a custom cake service

Boulangerie-Pâtisserie Bessa is a family bakery business founded in Moudon, in the canton of Vaud, in 2001, built on Portuguese baking traditions. What began as a small artisan bakery is now, in the site's words, a network of 14 outlets across French-speaking Switzerland (Suisse romande), including 1 restaurant and 2 food trucks. Alongside its daily bread and Portuguese pastries it runs a custom cake service, ordered through an online form, and it lists "Gâteaux élégants pour mariages" (elegant cakes for weddings) among its specialties.

For a couple, Bessa is a different proposition from a small cake studio. The cake is ordered online with a detailed form, collected from one of the bakery's outlets, and made by a sizable pastry team. There is no consultation step described on the site.

The company behind the cakes

The presentation page describes a production workshop in Moudon with more than 140 staff (bakers, pastry chefs, cooks and logistics staff) who make and deliver a wide range of specialties. Its signature product is the pastel de nata, which the page says has become part of daily life for many Swiss. Bessa supplies more than 200 private customers, and since 2019 Migros has been one of its most important clients. The page sums the business up as the warmth of Portugal, artisanal rigor and the wish to please.

The cake page adds the pastry side: "11 artisans pâtissiers à votre service, plus de 15 ans d'expérience, et des centaines de créations déjà réalisées dans toute la Suisse romande" (11 artisan pastry chefs, more than 15 years of experience, and hundreds of creations already made across French-speaking Switzerland).

How a custom cake is ordered

The cake page invites customers to browse Bessa's creations on Facebook, Instagram or Google, find a design they like, and have the bakery make it: "Chez Bessa, tout est possible : il suffit de nous montrer ce que vous imaginez" (at Bessa anything is possible, just show us what you have in mind). The specialties it lists range from number and animal cakes to themed cakes, adult party cakes, elegant cakes for weddings, baby showers and baptisms, and company cakes with a printed logo or an edible image.

The online form is where the choices are made. It asks for name, email and phone, the desired collection date and the outlet where the cake will be picked up, an optional photo to decorate the cake or print on an edible wafer (hostie), and a reference from the catalog if there is one. Then come the cake details:

  • weight, from 1 kg to 5 kg in half-kilo steps up to 4 kg
  • cake base: orange, plain, walnut, red fruit, chocolate (brigadeiro), a checkerboard Xadres cake, a rainbow cake, millefeuille, traditional pão de ló, chocolate pão de ló, or a mix of pão de ló with folhado (puff pastry)
  • filling: pastry cream, praline chocolate, brigadeiro chocolate, egg cream, diplomat cream, Chantilly, strawberry jelly, whipped cream, sliced fruit, sliced almonds, or none
  • covering: chocolate mousse cream, brigadeiro chocolate, sugar paste, dark or white chocolate, folhado, a photo on wafer, or buttercream

The form also asks for the exact text to appear on the cake and a free description. The Portuguese bases and fillings (pão de ló, brigadeiro, egg cream, folhado) give Bessa's cakes their particular character.

The rules the site sets out

The cake page lists its important conditions plainly. Online orders must be placed at least 48 hours in advance. A cake in a special shape needs a minimum of 3 kg. An egg-cream covering raises the price of the cake to 40 francs per kg, a rainbow cake to 40 francs per kg and a Xadrez cake to 34 francs per kg. Customers are told that the clearer and more precise the description, the closer the cake will match what they want, and to put the exact words for the cake in quotation marks. An order is only valid once a confirmation email has been received, and for any questions the page tells customers to contact their Bessa bakery.

Outlets for collection

The collection outlets listed on the form are Geneva, Lausanne (Vidy), Lausanne (Saint François), Moudon, Neuchâtel, Nyon, Payerne, Renens (rue de l'Avenir), Yverdon, Vevey, Fribourg and Morges, plus food trucks at Domdidier and Cheseaux. That spread is useful for a wedding anywhere in the region: the couple, or someone they trust, picks the cake up at the outlet nearest the venue. The site also has a page listing allergens across its products.

The head office is Boulangerie-Pâtisserie Bessa Sàrl, Avenue de la Grande Fin 5, 1510 Moudon. The phone number is 021 905 52 51, and the switchboard is staffed Monday to Friday from 8:00 to 12:00 and 13:00 to 17:00, closed at weekends. The email address is patisseriebessa@gmail.com.

What the site does not settle

The standard price per kilogram is not published: the page gives only the prices that apply to egg-cream coverings, rainbow and Xadrez cakes. The form is built for collection, and the site does not say whether a wedding cake can be delivered to a venue or set up there. Tiered or stacked wedding cakes are not described, and the largest weight on the form is 5 kg, so a couple with a large guest list should ask whether bigger cakes, or several cakes, are possible. The 48-hour minimum is a floor for online orders, not guidance for weddings, and the site gives no advice on how far ahead to book a wedding cake. There is no tasting or consultation described. The site and the form are in French only and say nothing about English.

Who it suits

Bessa suits couples marrying in French-speaking Switzerland who are happy to order a cake online from a clear set of options, collect it from a nearby outlet, and want flavors from the Portuguese tradition. It is also a practical route for a couple who already has a photo of the cake they want, since the site invites exactly that. The caveats are the lack of a published base price, the absence of any delivery or setup service for weddings on the site, the French-only form, and a process built for occasion cakes rather than for a large multi-tier wedding cake.
