A bakery café in Chur with its own cake style
Chüechli Backstuba (the site's full name is Chüechli Backstuba & Café) is a bakery and café at Untere Gasse 17, 7000 Chur, run by Lucia and her partner. It makes cakes for weddings, birthdays and other occasions, sells macarons, and runs a café with published opening hours. Its cakes follow one clear rule, stated at the top of the cake page: "Kein Fondant, kein Marzipan" (no fondant, no marzipan). Instead, each cake is covered with mascarpone cream and decorated with fresh fruit, flowers and macarons.
For a couple choosing a cake from abroad, that single line settles the question of style before any conversation. A couple who wants a smooth, sculpted fondant cake should look elsewhere; a couple who wants a cream cake with fresh flowers is in the right place.
Wedding cakes and the candy bar
The wedding section is headed "Eure Hochzeit" (your wedding) and "Torten für den schönsten Tag des Lebens" (cakes for the most beautiful day of your life). It says special moments deserve special cakes and that the Backstuba offers "das komplette Desserterlebnis für eure Hochzeit" (the complete dessert experience for your wedding).
Two things are on offer. On request, the team prepares a Candy Bar, which the page explains as a dessert buffet ("Candy Bar (Dessertbuffet)") with various treats chosen by the couple. And for the wedding cake itself, the page says there are almost no limits to the imagination. Its preferred decoration is fresh flowers wrapped in florist's tape ("frischen Blumen, die im Floristenband eingewickelt sind"), with further elements of the couple's choice. A couple can order either the cake or the candy bar, or both, from the same kitchen.
Lucia and the business
The about page is written by Lucia herself. She calls herself "die glückliche Bäckerin der Chüechli Backstuba" (the happy baker of the Chüechli Backstuba) and says her hobby became her job. She comes from Slovakia, where she helped her sister early on in her sister's first café, and she writes that baking definitely runs in the family. She has lived in Switzerland since 2010 and had long secretly wished to make baking cakes her profession. In September 2019 her dream of her own café came true, and her partner now works in the business full-time, which, she writes, made it a family business.
Ingredients
The about page puts natural, homemade production first: "Natürlich und selbstgemacht, das ist uns am wichtigsten" (natural and homemade, that matters most to us). The bakery uses regional products and does without additives that extend shelf life. Caramel, jam, honey, lemon curd and syrups are made in-house where possible ("was wir können, stellen wir selbst her"). Eggs come from free-range hens in Cazis, and coffee from Kaffeerösterei Keller, a roaster in the region. The cake page also links to a partner under the heading "Unser Partner".
Macarons and the café
Macarons have their own entry in the site's menu next to the café and the cakes, and they are part of the house decoration style, set on top of the mascarpone cream alongside fruit and flowers. For a wedding they are an obvious candidate for the candy bar or for guest favors, although the site does not say whether macarons can be ordered in quantity or in chosen colors. The café, with its published opening hours, gives a couple visiting Chur a place to see the bakery's work in person before ordering.
The team's own summary of why they bake is on the about page: "Wo aus Mehl und Eier verrückte Sachen entstehen, da sind wir zuhause" (where flour and eggs turn into crazy things, that is where we are at home). The ingredients section is headed "Genuss aus der Region, ganz ohne Reue" (enjoyment from the region, without regret).
Other occasions
The cake page also covers birthdays, with letter cakes and motif cakes for children's parties that use real toys, so the child keeps a present after the cake is eaten. For other occasions it names baby showers, confirmations and first communions.
Ordering and lead time
The page invites customers to request the range ("Jetzt Sortiment anfordern") or to order straight away by email at info@chuechli-backstuba.ch or by phone on +41 78 312 78 27. The lead time is given plainly: "Wir empfehlen, die Torte mindestens eine Woche im Voraus zu bestellen" (we recommend ordering the cake at least a week in advance). An order only becomes valid once the bakery confirms it. The page's tone is relaxed: "Du willst gleich bestellen? Super! Wir heizen schon mal den Ofen ein." (want to order right away? Great, we'll start heating the oven.) For a wedding, a week is a production minimum rather than a booking window, and a couple should secure the date much earlier.
Opening hours and visiting
The café is open Tuesday to Friday 10 to 18, Saturday 10 to 17 and Sunday 11 to 16, and the hours list no Monday opening. A couple in Chur can call in during those hours to see the cakes and talk through a wedding order. The site does not give transport or parking information for Untere Gasse.
What the site does not settle
The site publishes no prices for wedding cakes or the candy bar, and no sizes, tiers or guest numbers. It does not say whether the bakery delivers cakes to venues, how far it travels, or whether it sets up the cake or the dessert buffet on site. It does not list flavors or fillings for the sponge beneath the mascarpone cream. It says nothing about tastings. The site is in German, written in the informal "ihr" and "du", and does not say whether Lucia works in English, so a couple who does not speak German should ask in their first email.
Who it suits
Chüechli Backstuba suits couples marrying in and around Chur who like a fresh, cream-covered cake decorated with real flowers and fruit, and who may want a dessert buffet as well. Its emphasis on homemade components and regional ingredients will appeal to couples who care where their food comes from. The caveats are the lack of prices and delivery information, the German-only site, and a no-fondant rule that makes it the wrong choice for couples who want a sculpted or fondant-covered design.
